Bodega Vulcano is a family project in Tías built around an unusual approach for Lanzarote: young wines in small editions, made several times a year instead of once after harvest. To manage that they keep their own must bank at low temperature and draw batches from it to ferment across the year, the first winery on the island to work this way. Volcanic malvasía is the backbone of the whites: dry, with stone fruit, citrus and a mineral streak. The range also includes a semi-sweet white with a little Moscatel de Alejandría, a sweet wine from that same grape, a rosado and a red from Listán Negra, and a white from the diego variety; the Liquen line is organically farmed, and malvasía also appears aged in French oak. Vines are worked by hand in inverted-cone pits covered with volcanic sand, which shelter them from the wind and hold in moisture. Their boutique space, in Canarian architectural style, is where you taste through the range and hear how it is done, with a guided visit available.
