Bodega Olivina is a young project with old roots. In 2024 Jorge Rodríguez took up the work of several generations of growers in northern Lanzarote, specifically Lajares (Haría), an area shaped by the La Corona volcano and Atlantic wind. From its base in Guatiza (Teguise), the winery farms small plots by hand, releases short runs and keeps cellar work restrained. Its range is a good way to read the island through local varieties: Malvasía Volcánica in the dry white Respiro, fermented in stainless steel and worked on its lees; Listán Negro in a pale rosé and a young red with cherry and black pepper; a fresh floral semidulce, Alma de Maremoto; and two more personal wines, Danza de Lías, a Malvasía from the Tamia plot aged on lees and then in bottle, and La huella de Luis, an ancestral-method Diego from old vines. For wine travellers it is a worthwhile stop to see how a family-rooted, contemporary project interprets volcanic soils. There is a shop; check ahead about visits or tastings.
