David Fernández is one of the island's few young growers. He farms small plots scattered across Lanzarote by hand and vinifies each one separately, trying to step in as little as possible: spontaneous ferments, patience, very little equipment. The wines are named after the plot they come from — Frías, Masdache, Aganada, Maho, Mancha Blanca — and rest in tank or French oak until they are ready. Only traditional Lanzarote varieties go into them, grown in volcanic ash: the black picón that holds on to the scarce rain and lets vines take root where it looks impossible, with dry-stone walls built to break the trade winds. The winery runs on a garage scale: hand-picked fruit, selection in the vineyard, ferments left to their own pace. Visits begin with a walk through the vines, continue into the cellar cut out of volcanic rock and end with a tasting of five wines, with no more than ten people at a time. It is in Guatiza, the village of the Cactus Garden.
